Cans Get You Cooking!

Our favorite grocery store, Big Y, partnered with CansGetYouCooking.com to sponsor a recipe contest. The "Cozy Crockpot Recipe Contest" required that you submit your best crockpot recipe using at least two canned goods. We entered our Slightly Smoky Ham and Bean Soup (which uses canned tomatoes, canned chicken stock and two types of canned beans) and we won! Hurrah! Click here for the easy to make, light-on-the-wallet, hearty soup recipe.

Together, We Eat

It has been quite a couple of weeks for A Couple in the Kitchen. Namely, we were named as Grand Prize Winners of the IKEA Together, We Eat Contest, "Serving Up Spring" with our Spring Onion and Ricotta Fresca Tart.

See the announcement, our "Together, We Eat" story, the recipe, and some photos here: Together, We Eat. Soon we'll be heading to NYC for our video shoot with IKEA and our photo shoot for (wait for it...) Oprah Magazine! Woot!

As always, thank you for reading about our foodie adventures. Cheers!

Fisher Nuts Features Our Sweet Potato Risotto with Glazed Walnuts

Last fall, our original "Sweet Potato Risotto with Spicy Maple Glazed Walnuts" recipe was one of the Top 10 finalists in the Fisher Nuts "My Fresh Twist" Recipe Contest. We won a monetary prize, a signed copy of Alex Guarnaschelli's cookbook Old School Comfort Food and, naturally, bragging rights. The final part of our prize just came this week, and that is Fisher Nuts having our recipe professionally cooked, styled, photographed, and featured on their website. How cool is that?!?!?

Here's the link to the feature on their website, and the beautiful photograph you can see there, or above. We think it looks amazing.

Thank you to Fisher Nuts and Chef Guarnaschelli!!!

Savory Maple and Sweet Potato Risotto

We love real maple syrup to such a degree that we have never allowed the fake stuff into our home, and when venturing out to a restaurant for breakfast, Amy will bring a small container of her cousins' syrup with her. Yes, it's that important. We even used it in a brownie recipe once. So why not in a savory one-pot dinner dish?

We repurposed an old risotto recipe of ours to make it easier. So easy, in fact, that it can be make in one pot. And this recipe, now, has it all: deliciously creamy rice, slightly caramelized chunks of sweet potato, soft onions, an herby savoriness that comes from fresh rosemary, and a delightful hint of sweetness from - you guessed it! - real maple syrup.

As for using maple syrup in a risotto dish? That's just our way to...

We, and the neighbors we shared it with, loved this dish so much we thought we needed to enter it into Pure Canada Maple's "Think Outside the Griddle" contest.

The recipe, as always, is below. Like we said, it's a one-pot wonder, and here's the best thing - it makes lots of risotto. And we have a great idea for the leftovers - make arancini the next day! To do that, just take the chilled leftover risotto, form it into small balls, roll the balls in Italian breadcrumbs and fry in a skillet filled about 1/4-inch of the way up with vegetable oil. Serve with a nice green salad to make another meal!

Savory Maple and Sweet Potato Risotto

Ingredients:

4 cups vegetable broth
2 tablespoons olive oil
2 cups (about 1 large) peeled, diced sweet potato
1 medium onion, chopped
1 tablespoon butter
1 cup arborio rice
1 tablespoon finely chopped fresh rosemary
salt and white pepper to taste
1/4 cup real maple syrup

Place the vegetable broth into a saucepan and place over medium-low heat to become warm. In a large skillet, heat the olive oil over medium heat. Add the diced sweet potato and a pinch of salt and cook until sweet potato starts to brown. Add onions and continue to cook until the onions become translucent. Add the butter and allow it to melt. Pour in the rice and continue to cook, stirring, until rice starts to toast. Add the warm vegetable broth to the rice one ladle at a time, stirring constantly, and waiting until all the broth is absorbed by the rice before adding more. This could take up to one-half hour. When the broth is gone and the rice is done (not too firm, not too mushy), stir in the chopped rosemary and season with salt and white pepper to taste. Turn off the heat, then add the maple syrup, stirring gently so that everything is well combined, then serve and enjoy!

Today Was a Good Day for ACK

Today was a good day for A Couple in the Kitchen (aka ACK) and we wanted to share it with all of you.

First, we received a very nice comment from Lillian of My Recipe Journey nominating us for the Liebster Award. Lillian has a post about the award on her website that you can check out. We also did a little research ourselves and found out that the Liebster Award has been circulating for a few years now and it is awarded from one blogger to another to let them know they are "liebster" - German for "beloved." While Lillian's version of the award came with some tasks, we found a loophole during our search that allows one to accept an honorary version without doing the tasks. Since we teachers have enough tasks to complete, and we like our blogging tasks to be food-related, we're going with the loophole. Thank you so much, Lillian, for thinking of us. We are honored!!!

Next, we got an email from the Blogger Outreach Program at OXO and they are going to be sending us some egg tools to try out and review. Just in time for Easter (although we wish we had that egg separator when we made that Meyer lemon curd!)!!! So that's something to look forward to.

And finally, we had entered our Moonshine Sticky Wings recipe into a recipe contest and found out today that we won an Editor's Choice award (which, happily, also happens to come with a little bit of prize money!). The contest was called "Stick a Fork in It" for SplashPad Mobile's new Android app "Top Recipes." You can get the app here if you are interested! Look for our recipe, which is designated by this special ribbon:

So, yeah! It was a good day for ACK!!! Time to uncork a bottle of vino and celebrate!

Please Vote for Our Molecule-R Recipe

Some time ago, we started experimenting with molecular gastronomy. You know, Chris being a science geek and all. Well, we entered one of our experiments into a contest and would love your help in trying to win it! Our recipe was for Gravlax with Spherified Mustard Sauce and it came out looking like this:

Yes, folks, that is not an egg yolk but in fact a sphere of mustard sauce. Gotta love chemistry. Anyway, if you like what you see, and you have a minute to spare, please go HERE and vote for the Gravlax recipe (the one by Chris and Amy White of CT - that's us!) pictured above. Voting ends December 9.

Thank you so much!!! We'll let you know how it goes!
